Korea Trip Day 17 - Making Of Kimchi [ 한국여행 열일곱째날 - 김장 ]

Entering into day 17 of my vacation and also marking the day on the calendar that I have to go back to reality soon.
However, something that I did not expect to experience happened on the last few days of my vacation. Yong and Irene told me that that their mother ( in-law ) is going to  be busy during Sunday as it is Kimjang [ 김장 ] day for them.

Kimjang [ 김장 ] refer to the traditional process of preparation and preservation of kimchi during winter.
Kimchi [ 김치 ] is a kind of traditional fermented side dish made of vegetables with different kinds of seasonings and is often being described as spicy and sour. There are many different varieties of Kimchi [ 김치 ] made from napa cabbage ( kind of Chinese cabbage ), radish, cucumber as the main ingredient.
Kimchi [ 김치 ] is made fresh from seasonal vegetables during summer, but during winter, people need to prepare large amount of Kimchi [ 김치 ] so as to provide nutrition throughout winter.
Kimjang [ 김장 ] can lasted for 2 to 3 days with the help from many people. The amount of cabbages prepared will depend on the number of people in the household.

Kimjang [ 김장 ] can be a tough and tiring process thus lots of people prefer to get ready-make Kimchi [ 김치 ] from the market rather than spending the time to make their own Kimchi [ 김치 ]. However, due to the fact the Yong's mum is a lady with traditional thinking so I can get to experience and view the process too. And Yong's mum is so nice to change the day of Kimjang [ 김장 ] to Saturday as I will be meeting up with my friend on Sunday.

Nowadays, things can get more simple as you can get salted napa cabbage from the market and you can save the time and shorten the process of kimchi making. The soaking and seasoning of the cabbage can take hours and allowing the cabbage to sit in order to ensure that the salt is absorbed evenly can take another few hours. Usually, people will choose to go through this process the day before and the actual kimchi making will take place the next day. 
With salted cabbage ( cabbage that have already go through the process of soa, season and sitting in ) selling on the market, people get to save a lot of time and trouble. 

Other vegetables needed 

The process of  Kimjang [ 김장 ] is really not easy as I thought. From the shows that I had watched on TV, they did not show much on the process, so I did not expected the amount of effort and work required. Yong's mum woke up really early ( guess about 4-5am ), so as to prepare the stock used. 
The stock is made with a kind of shrimp sauce [ 새우젓 ] and kim [ 김 ] ( seaweed ) and boiled for some time ( think it can even take hours since Yong's mummy gonna wake up that early ).

A friend of Yong's mum came at about 9-10am and I heard from Yong's mum that her friend is really good in cooking especially cooking of Korean food. Her friend will be the main 'chef' for the Kimjang [ 김장 ] process while the rest of the people are the helpers. Her friend sat down and started the really long process of cutting the vegetables.

After about 1 - 2 hours of cutting, all the vegetables are finally evenly cut and all ready for the next step. 


Red chili flakes [ 고추가루 ] being added to the radish. The amount of chili flakes added depends on the degree of spiciness that you want. If you are the kind that can't really take food that is too spicy, you can reduce the amount of chili flakes.

I was told that this so called porridge-like substance is made from rice and they served the purpose of making the mixture to be 'sticky' so that they will 'stick' to the napa cabbage later on.

After going through some many rounds of adding ( of ingredients ) and mixing, the chili paste is finally ready to be 'apply' on the napa cabbage. 
The napa cabbage are usually cut into half so that it is easier to apply the chili paste on it.

I thought that you just have to apply the chili paste onto the cabbage and that's all but I'm wrong. There is a certain way to apply the chili paste. You have to 'separate' a few leaves of the cabbage ( without tearing them out ) and these few leaves are used to wrap around the cabbage and it was said that to keep and seal the taste in the cabbage.

Some families will add oysters to the mixture of chili paste but in this case, Yong's mum taught me to eat the oyster with the kimchi that is just freshly made. The crunchy taste, the spiciness and the sweetness of the kimchi totally blend with the oyster and the oyster add sweetness to the kimchi. I'm the kind of people who don't like to eat raw food but I can totally accept this particular way of eating the oyster and not finding and raw feeling from the oyster at all.  

The kimchi are then kept and placed in a container with good seal. Usually they will not filled the kimchi right to the brim as the kimchi will produce liquid while fermenting and it might overflow.  
The kimchi will be leave out in room temperature for a day or two for proper fermentation. And they will be kept in the refrigerator after that. 
Korean family usually have 2 refrigerator in their homes, one for normal food stuff while one is just purely for storing of kimchi.

We had our lunch with the fresh kimchi and soup cooked by Yong's mum. Although the lunch was simple, but it's really tasty....Missing the food right now...Really love the soup...

Extra Information about Kimjang [ 김장 ] :
The practice of Kimjang [ 김장 ] reestablish Korean identity and strengthens family cooperation. Kimjang [ 김장 ] encourages sharing and exchanging and helps to strenghten family ties, as each famil has their own method of  Kimchi [ 김치 ] preparation and therefore, every family's unique method and flavors will be passed from generation to generation. Newly added family members will have to learn and must be willing to adapt and the customs of their new family. 
Thus, Kimjang [ 김장 ] serves as an remainder for many Koreans that the human communities need to live in harmony with the nature. 

Kimjang [ 김장 ] was added to the world's intangible heritage list by UNESCO. 
The listing allow Korea to not only preserve the yearly household tradition and the community spirit that goes with it but also allowing Korea to promote Kimchi [ 김치 ] globally. 

Although there are lesser families who are willing to spend the time to continue the tradition due to the fact that most people are getting busy with their lifestyle, however, there are still families who are willing to continue this traditional and they deserved to be praised and recognized for their effort in maintaining the traditional. 

Really enjoyed myself experiencing Kimjang [ 김장 ] and learning about things that I had never seen before. The whole experience was really wonderful and I really hope that I will have the chance to do it again..Till then, I will just keep the memory in my mind and recapping about the process when winter is approaching. =P

Korea Trip 2014 [ Suncheon ] - [ 한국여행 - 순천행 ]

Reached Suncheon [ 순천 ] only in the late afternoon, and Alice and I went straight to Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ].

Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ] is a coastal wetland, comprised a long stream of about 3.5km, a tideland of about 2221 hectare and a field of reed of about 230 hectare. Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ] is a habitat of migratory birds, plants and animals due to its natural coast and it is also Korea first coastal wetland.

Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ] is well-known for its field of reed that is taller than a full-grown man. The field of reed in Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ] is the biggest colony of reeds in Korea. The view of the entire field of reed swaying in the wind is as incredible as waves of the sea.

The reed field is also an important contribution from the perspective of environmental factor as reeds are effective in water purifying. For the last three decades, the water of Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ] has stayed clean and problems such as red tides has never surfaced before. 
Walking paths have been created through the reeds field, so that visitors can take a stroll and enjoyed the natural beauty and observing the plentiful wildlife. Visitors can also choose to take the boat rides out into the bay when the tide comes in.

The reed field is also home to many plants such as the common reed and startwort. Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ] is known to attract the largest number of rare birds. Different kinds of migratory birds can be seen throughout the four different season in Korea, and if you are lucky, you might be able to spot some endangered birds too. 
It is said that quiet winter month is the best season to see these feathered friends. However, it can be quiet chilly when the wind blows so do dress warmly.  

It is a must to visit the Yongsan observatory [ 용산 전망대 ] while you are at Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ].

Although it takes about 40min to 1hour to climb up from Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ] to Yongsan observatory [ 용산 전망대 ], but you will not regret it. The observatory is the perfect place to view the S-shaped waterway of Suncheonman Bay [ 순천만 ] and the reed field that surround the bay.

Make sure that you have your camera battery is fully charge or at least at a spare battery as Suncheonman Bay [ 순천만 ] is a wonderful place for taking photos.

From Suncheon Train Station, walk to the right along Palmaro street for about 100m and cross the street.
Take bus 67 and get off at Suncheonman (순천만). 
or
From Suncheon Bus Terminal, cross Suncheon3-gil street and walk along Palmaro street to the bus stop.
Take bus 67 and get off at Suncheonman (순천만).

After visiting Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ], it was already late evening, and as we did not had any lunch, Alica and I decided to go for early dinner. 
There are a few restaurants nearby the park, and we couldn't decide where shall we have our dinner, so we resorted to random pick a restaurant. 

The restaurant that we visited served Hanjeongsik [ 한정식 ], which is famous in the region of Jeolla-do. Hanjeongsik [ 한정식 ] is a full-course Korean meal with an array of side dishes cooked in the traditional Jeolla-do style.

Look at the different style of cooking methods for the crabs and all these are served as side dishes. The table was so full that I almost couldn't take a photo with all the dishes fitting in. 
With all these dishes, the price of the meal is unbelievable.......cheap!!!! I only paid for 10 000won per person for all these. And the 아줌마s in the restaurant were so nice, they kept on asking us if we had enough and that if we need any refill for any of the dishes....yes...and the refills are for free....but Alice and I were too full to ask for any refill. 

There are many Hanjeongsik [ 한정식 ] restaurants located near Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ], and different restaurants are famous for the different side dishes, so you can just have a stroll around before deciding which restaurant to have your meal. But I feel that the restaurants are kinda of like under the same boss, as when we were eating, the 아줌마s from the nearby restaurants all gathered and heard that they were waiting for the boss to arrive for a meeting. 

After having our lunch cum dinner, we made our way to the guesthouse. Due to some unforeseen circumstance, our plan for the night and the next day had to be forsake. However, the unforeseen circumstance allows me to understand the drinking culture of Korean ( Shall blog about it the next time ) and also allowing me to get to know some new friends. 

New friends made during Suncheon [ 순천 ] trip

The trip to Suncheon [ 순천 ] is an unforgettable memory of part of my Korea vacation 2015. Although there are still lots of places in Suncheon [ 순천 ] that I do not have the chance to visit, but in every loss there is a gain. I get to gain new enjoyable memories and I get to gain some new friends and all these replaced the loss. Hope that I will get to visit Suncheon [ 순천 ] again in the near future and to all my new friends, hope that we will meet again soon. In the meanwhile, take care. 

Korea Trip Day 15 [ 한국여행 - 열다섯째날 ]

Had read a lot about places to visit in Gangwondo [ 강원도 ], such as places like Seoraksan National Park [ 설악산국립공원 ], Daegwallyeong Sheep Farm [ 대관령 양떼목장 ], Hwanseongul Cave [ 환선굴 ], Cheongpyeongsa Temple [ 청평사 ], Jeongdongjin Beach [ 정동진해변 ] and many more beautiful and interesting places.
However, all these places are located in different parts of  Gangwondo [ 강원도 ] and I really can't decided where to go, thus decided to change our plan after Alice showed me some photos on Suncheon [ 순천 ].

Suncheon [ 순천 ] is a now a quickly emertging as the ecological capital of Korea, and the city is often known as Eco-city and also Jeollanam-do coastal jewel. It is a city that you must visit especially if you are a nature lover. Suncheon [ 순천 ] further established its reputation as an eco-city after hosting the International Garden Exposition Suncheon Bay Korea in the year of 2013. 
There are quite a few well-known places in Suncheon [ 순천 ] recommended for tourist visit. Some of these places are Suncheon Open Film Set [ 순천 드라마 세트장 ], Naganeupseong Folk Village [ 낙안읍성 ], Seonamsa Temple [ 선암사 ], Suncheonman Bay Ecological Park [ 순천만 자연생태공원 ], etc. 

For those who are interested in visiting Suncheon [ 순천 ], these are the few ways that you can get to Suncheon [ 순천 ]  from Seoul. 

How to go to Suncheon [ 순천 ] from Seoul [ 서울 ] :
You can get to Suncheon [ 순천 ] easily by taking the different modes of transport.

KTX - Direct, Standard class costs about 43 000won ( ~SG$52.20 ) - Takes about 3hour 15mins,
ITX Samaeul - Direct, Standard class costs about 37 800won ( ~SG$45.80 ) - Takes about 4hours 10mins.
Mugunghwa - Direct, Standard class costs about 25 400won ( ~SG30.80 ) - Takes about 4hours 45mins

The train will start from Seoul [ 서울 ] - Yongsan Station [ 용산역 ], Line 1 [ 1호선 ] / Gyeongui–Jungang Line [ 경의·중앙선 ] and ends at Suncheon Station [ 순천역 ].

* Prices of the train might varies as if you are lucky, there might be promotion for the KTX tickets. Tickets can be purchase at the stations itself but you can also make online booking through http://www.letskorail.com/ebizbf/EbizBfIndex.do and collect the tickets at the station on the day that you travel.

By Bus 
Another option to travel to Suncheon Station [ 순천역 ] is taking the bus. The journey will take about 3hours 50min ( Excluding a 10-15min break during the journey )

Buses from Seoul Express Bus Terminal [ 서울(강남)고속버스터미널 ] :
3 different kinds of buses to choose from - General, Excellent and Night Bus. The differences between these buses are of course the ticket price and also the number of seats on the bus.

General - Can take up to 45 people and it costs about 19 300won ( ~SG$23.40 )
Excellent - Can take up to 28 people and it costs about 28 600won ( ~SG$34.70 )
Night Bus - Can take up to 28 people and it costs about 31 400won ( ~SG$38.10 )

You can go to the website https://www.hticket.co.kr/main.action to check on the schedule of the bus before your trip.
* But do note that the website is in Korean language.

To go to Seoul Express Bus Terminal [ 서울(강남)고속버스터미널 ] , you have to take the subway to Express Bus Terminal Station [ 고속터미널역 ], Line 3/7/9 [ 3/7/9 호선 ] and go to exit 1. After you come out from the exit, just follow the signs to get to the bus terminal. Do not panic if you entered a shopping mall as the bus terminal in located at one of the level of the shopping mall. 

* Note that the travel time by bus can vary depending on the traffic.
** Do note that the prices of the different tickets served only as a guideline as the prices are subject to change on different conditions.

By plane
There is no airport located in Suncheon [ 순천 ] and the nearest airport to Suncheon [ 순천 ] is at Yeosu [ 여수 ] is about 1 hour 30min away from Suncheon [ 순천 ].

* For my personal view, this might not be the best option to travel to Suncheon [ 순천 ] from Seoul [ 서울 ] as there is too much transfer in between and it can be a hassle if you have a luggage with you.

Korea 2014 [ Gyeongju Day 2 ] - [ 한국여행 - 경주행 둘째날 ]

Shall continue and share about my second day in Gyeongju [ 경주 ].

Jamie and I signed up for the City Tour of Gyeongju on the Silla history Course which include some famous attraction such as Bulguksa Temple [ 불국사 ], Bomun Lake Resort [ 보문관광단지 ], Anapji Pond [ 안압지 ], Tomb of General Kim Yushin [ 김유신묘 ], etc and it's just for 10 000won ( ~SGD $12.20 ) which is a reasonable price.
We wake up for the day and excitingly preparing for the day ahead. We were surprised and amazed when we saw the piece of white outside the guesthouse ( I was told that it seldom snow in Gyeongju, let alone heavy snow ).

We made our way to the travel agency but was informed that the city tour would be canceled due to the piling of the snow and they would have problem driving as the road would be really slippery especially if the bus is going up the slope. 
* Note : Due to the fact that it seldom snow in Gyeongju [ 경주 ], the people are not really prepared to drive on a road with snow, thus they will usually fit their wheels with snow chain so as to provide maximum traction when they are driving through the snow. 

Both Jamie and I were disappointed but there's nothing that we could do as we understand that safety is the most important consideration for the agency. We were thinking to forsake our plan in Gyeongju [ 경주 ] or is there any other things that we can do in Gyeongju [ 경주 ] instead. 
One of the lady in the agency told us that there were some famous attractions that we could reached by walking so Jamie and I decided to go for those attractions instead. 

We set off for our first destination - Daereungwon Tomb Complex [ 대릉원 ] which is commonly known as Cheonmachong Tomb [ 천마총 ]. 
Cheonmachong Tomb [ 천마총 ] which also meant Heavenly Horse Tomb, but did not actually contain a horse in the tomb. The name came after finding a painting of a heavenly horse during excavation of the tomb. 

The tomb was excavated in 1973, and is believed to dated from fifth or maybe the sixth century. The tomb was built for an unknown king of the kingdom of Silla.

There are 23 large tombs located at Daereungwon Tomb Complex [ 대릉원 ] and the most well-known tombs being Cheonmachong and Hwangnamdaechong. 
The tomb has stones being piled all around it so as to prevent thieves, and the walls collapsed on thieves  as they tried to dig their way into the tomb.
The site was then transformed into a museum, to reveal how the site was excavated. Imitations of the uncovered artifacts placed in the positions in which they were found.
Daereungwon Tomb Complex [ 대릉원 ] is being listed as Historic Site Number 512 on 28 July 2011.

Admission Fee : 2000won ( Adults ), 1200won ( Youth ), 600won ( Child )
However, it is free to just view the structure of the tomb on the outside. 
Opening Hours : 8.30am - 9.00pm

How to get to Cheonmachong Tomb [ 천마총 ] : 
There are a few buses to get to Cheonmachong Tomb [ 천마총 ]. 
You can easily take buses 50, 51, 70 and 700 from Gyeongju Bus Terminal and alight at the entrance of Daereungwon Tomb Complex [ 대릉원 ].

After touring at Cheonmachong Tomb [ 천마총 ], we started out on our journey to Gyochon Traditional Village [ 교촌마을 ], which is said to be nearby Cheonmachong Tomb [ 천마총 ]. However, after walking for about 30min - 45min ( and also losing our way ), we finally reached Gyochon Traditional Village [ 교촌마을 ].

Gyochon Traditional Village [ 교촌마을 ] is a hanok village that allows people to look at the inside life of the famous Choi clan. Choi [ 최 ], is one of the common family name, and is said to be 4th most common surname in Korea. It was claimed that the founder of Gyeongju Choi clan is a Silla scholar - Choi Chi Won.

We met an elderly man who can speak English really well, and he explained to us the reason that the Choi clan remained as the most respectable family in Gyeongju [ 경주 ]. 



Firstly, he explained to us the 6 guidelines of Choi's family to serve as code of conduct and also manage a household.

1. Apply for Gwageo [ 과거 ], but do not take the official rank higher than Jinsa [ 진사 ]. 
( Implying that one should not greed over authority and ranking as the higher rank you go, the higher risk that you will have in your life. However, one should not forget about the purpose of study thus they have to go for the basic level of exam. )

2. Return to the society any possessions over ten thousand seok. 
( Ten thousand seok - a way to measure the amount of rice. The family is not encouraged to pile up fortune that exceed ten thousand seok of rice. If the amount exceed, they will have to return it back to the society. )

3. Do not expand the land at the time of famine. 
( Choi's family was taught not to purchase any piece of land from the farmers during the year of poor harvest. )

4. Receive guests warmly with hospitality. 
( Treat all the guests well, even if they are just passer-by )

5. Make sure not to let anyone starve to death within 100 ri of you. 
( Let no one within your sphere starve to death. )

6. Have a newly wedded daughter-in-law wear cotton clothes for three years. 
( Newly wedded daughter-in-law were encouraged to wear cotton clothes as cotton were considered for the poor. Choi's family do not hope that their daughter-in-law married into the family with the thoughts of enjoying a rich life but to live with a humble heart. )

These 6 guidelines were to encourage the people in Choi's family to live a humble life, to live in harmony with their neighbours, and taking care of those in need instead of pursuing for high-rank authority for their individual glory or for the sake of family's reputation.

The elderly man also explained to us the 6 mental rules of Choi's family for their daily living. 

1. Regard yourself as being transcendental and appear detached. 
2. Receive others warmheartedly and keep friendly relationships.
3. In idle moments, rid your mid of dark thoughts and brightening your thinking.
4. Show courage in dealing with difficult tasks and face emergencies bravely. 
5. Remain modest even when successful and do not become haughty. 
6. Remain calm even in the face of frustration or failure. 

These 6 mental rules tie in closely with the 6 guidelines of Choi's family and they served as a very important remainder to the way of living and also the way to treat people. Although these are meant for the Choi's family but I feel that it is also meant for all people. 
I learnt a lot of things after the short 'lesson' and I also found it really interested and understand the Choi's family can be so successful and respected by many people even until today. 

There are also other traditional activities that are going on in the hanok village, but I guess due to the snow and that the owners of these cultural experience center felt that there would be no tourists due to the snow, thus a lot of the centers were closed for that day.

How to get to Gyochon Traditional Village [ 교촌마을 ] :
Recommended for you to take a taxi into the village as you still have to walk a distance from the bus stop, and the frequency of the buses is kinda of long. We waited for about 30min and there is no bus but yet we do not see any taxi in sight too, so we flagged the first taxi that we saw. 
* It will takes about 4000won ( ~SGD5 ) if you take a cab from Gyeongju Express Bus Terminal. 

After visiting Gyochon Traditional Village [ 교촌마을 ], and also after considering the weather ( Snow had melted due to the sun ), we settled on our plan to visit Bulguksa Temple [ 불국사 ]. 

Bulguksa Temple [ 불국사 ] which meant temple of the Buddha Land, is an important representative architecture of the kingdom of Silla ad also one of the largest temple in South Korea. Bulguksa Temple [ 불국사 ] was built in 528 during the Silla kingdom, under the reign of King BeopHeung [ 법흥왕 ]. 

Bulguksa Temple [ 불국사 ] was never intended to be a major temple was intentionally by King BeopHeung [ 법흥왕 ] for the use of his queen as a praying site to pray for the welfare of the kingdom. The temple was initially given the name - Hwaeombeomnyusa.
The temple was designed by Kim DaeSeong [ 김대성 ], an architect who is well-known for his talent and also for his ugliness. The nickname "Big Wall" was given to Kim DaeSeong [ 김대성 ] due to his massive forehead. Kim DaeSeong [ 김대성 ] found refuge in Buddhism and was eventually reincarnated as a future king’s prime minister.

Bulguksa Temple [ 불국사 ] went through lots of renovation from Goryeo Dynasty ( 918 - 1392 ) to the Joseon Dynasty ( 1392 - 1910 ). The temple was then burned down during the Imjinwaeran War [ 임진왜란 ] ( also known as Japanese invasion - 1592 - 1598 ).
Reconstruction of the temple started again in 1604, during the reign of King Seonjo [ 선조 ] during the Joseon Dynasty [ 조선 ] and was renovated for about 40 times until 1805. The Bulguksa Temple Restoration Committe was formed in 1973. Bulguksa Temple [ 불국사 ] was fully restored under President Park ChungHee ( 1961 - 1979 ).

Even until today, Bulguksa Temple [ 불국사 ] is home to many important cultural relics such as stone pagoda Dabotap [ 다보탑 ], Seokgatap [ 석가탑 ], the Golden Seated Amida Figure and many more.

Although the temple can be consider old as compared to other temples, but it is also amazing how the temple is being maintain.

Bulguksa Temple [ 불국사 ] was added to the World Heritage List as a World Cultural Asset by UNESCO in 1995, together with the nearby Seokguram Grotto [ 석굴암 ]. It is also classified as Historic and Scenic Site Number 1 by the South Korean government.

Bulguksa Temple [ 불국사 ] is an interesting place to visit even for people who are of other religious, as there are many remarkable structure of the temples and also designs used in the temple that is worth seeing. The national treasures that are situated in the temple are also worth making a trip down to the temple.

Take bus 10 or bus 11 from the bus stop located across the street of Gyeongju Express Bus Terminal. Alight at the Bulguksa Temple [ 불국사 ] Bus Stop

Went for lunch with Jamie and 2 new found friends from Malaysia - Kee Fei and Jienie. Jamie and I headed back to Seoul after lunch and this also ended off our trip to Gyeongju [ 경주 ]. 
There are still many places in Gyeongju [ 경주 ] that I have yet to visit, but I will definitely return to Gyeongju [ 경주 ] again.
